Spanish Chorizo Rice

I love this meal. It's quick, it's easy and it's delicious. It also makes great left overs and freezes really well. It's a great freezer meal and a great lunch. We often make this on a Sunday and then have leftovers for lunches through the week.
Chorizo - not all chorizo is made equal. I've tried a lot over the years and I don't think you can beat Hans Spanish Chorizo. Hans Chorizo is a Spanish style fermented and coarsely textured sausage made from meat including pork, with mild chilli and paprika flavours and a touch of garlic and wood smoked.
Ingredients
250g Hans Spanish Chorizo
2 Cups White Rice
1 TBSP Minced Garlic
1 Brown Onion Diced
2 Capsicums Diced
200g Sundried Tomato Strips
2 TBSP Parsley (fresh or dried)
2 TSP Ground Paprika
1/4 TSP Pepper
Method
1. Cook rice and set aside.
2. Heat oil and minced garlic in fry pan. Once hot, add in chorizo and cook until it starts to brown. Remove from heat and set aside.
3. Cook onion and capsicum in fry pan. Once cooked add chorizo and rice to the pan and combine. Add paprika, pepper, sun-dried tomatoes and parsley to the pan and combine. 
4. Serve and garnish with additional parsley and chili flakes (optional)
