Singapore Noodles

Singapore Noodles

A takeaway favourite!! Singapore Noodles with it's signature yellow hue and curry flavour. A versatile dish where you can use the ingredients below or utilise the leftovers in your fridge to add to the noodles. My favourite addition to Singapore Noodles is fried chicken schnitzel. It pairs so well with the flavours in the noodles and is how I grew up having them from a local Chinese takeaway. A perfect meal and excellent left over / lunches for the days following. Ingredients - 1 TSP Minced Garlic - 3 TSP Curry Powder - 2 Carrots  - 1 Capsicum - 1...

KFC Inspired Chicken

KFC Inspired Chicken

Missing KFC style Chicken? Me Too!! KFC was always my weakness pre-diagnosis and oh how I've missed it. Well now I can enjoy it again.  Does it have to be fried? Absolutely not. Chinese Honey Chicken

This recipe takes me straight back to my childhood. I grew up in regional Victoria and we used to visit Melbourne often. I look so forward to the leftovers!! I have not tried freezing it and I am unsure how it would defrost so my recommendation would be...

Spanish Chorizo Rice

Spanish Chorizo Rice

I love this meal. It's quick, it's easy and it's delicious. It also makes great left overs and freezes really well. It's a great freezer meal and a great lunch. We often make this on a Sunday and then have leftovers for lunches through the week. Chorizo - not all chorizo is made equal. I've tried a lot over the years and I don't think you can beat Hans Spanish Chorizo. Hans Chorizo is a Spanish style fermented and coarsely textured sausage made from meat including pork, with mild chilli and paprika flavours and a touch of garlic and wood smoked....

The BEST Fried Rice

The BEST Fried Rice

Fried rice and I go wayyy back! And by way back I mean circa 2002. I remember the first time I made fried rice.... My father had recently taken a BBQ course and had introduced our family to the deliciousness that is pork spare ribs marinated in Hoisin sauce, If you haven't tried it STOP EVERYTHING - GO NOW, You can thank me later!! So, one weekend my father suggested we BBQ up his Hoisin pork and that maybe we should make some fried rice to have with it. I was sold! I loved fried rice and I had never made...
