One Bowl Blueberry Muffins

You'll only need one bowl and a mixer to make these easy Blueberry Muffins. This is my go to muffin recipe, they are soft and full of flavour and a family favourite! You can easily switch out the blueberries to make different flavour muffins as the base mix is super versatile. Why not try chocolate chips, raspberries or even white chocolate and macadamias.
Ingredients
2 Eggs
130g Unsalted Butter (softened)
3/4 Cup Caster Sugar
2 Cups Gluten Free Self Raising Flour
2/3 Cup Milk
1 TSP Vanilla Essence
200g Blueberries (fresh or frozen)
 
Method
1. Preheat oven to 180C. Line muffin tray with patty pans or spray with oil.
2. Combine all ingredients in the bowl of a stand mixer and mix on low. Once combined turn mixer to high and mix for two minutes. 
3. Stir through Blueberries.
4. Spread mixture across 12 prepared patty pans.
5. Bake for 20 minutes or until muffin tops bounce back when gently pushed.
6. Allow to cool before serving.
