This is my favorite sugar cookie recipe; They are crisp on the edges, soft on the inside and feature a buttery vanilla flavour. These cookies are definitely a crowd pleaser!
This has become my go to cookie recipe, It's easy and fast to make and the cookies stay soft and last for days. I hope you enjoy make and eating (definitely eating) these as much as I do.
Ingredients
225g butter cubed (cold)
1 Cup Caster Sugar
1 Egg
1.5 TSP Vanilla Essence
1.5 TSP Baking Powder
1/4 TSP Salt
3 Cups Plain Gluten Free Flour
Method
- Preheat oven to 180C. Line 3 baking trays with baking paper.
- Using an electric mixer, mix butter and sugar on a medium speed for 2 minutes.
- Add egg, vanilla, baking powder and salt to butter mixture. Beat until combined and smooth.
- On a slow speed, add flour 1 cup at a time. Mix until the dough comes together.
- Scrape dough onto a sheet of cling wrap and roll into a log, wrap and place in the fridge for a minimum of 30 minutes.
6. Remove from fridge, roll dough between 2 baking sheet to 1/2 cm thickness. Use a cookie cut to cut into desired shape. Place on baking paper. (If you have trouble cutting the dough it's become to warm and will need to go back into the fridge).
7. Play cookie trays in oven and cook for 8-10 minutes or until edges start to lightly golden. Transfer to a wire rack to cool.
8. Enjoy cookies as is or decorate with icing.
