No Bake Chocolate Cheesecake With Mint Chocolate Base
An easy no bake chocolate cheesecake featuring a mint chocolate base, made with easy to use ingredients (no gelatine) and not too sweet.... Here it is!
This is one of my favourite recipes, I could eat this every single night and not get sick of this. It's light, has the right amount of chocolate and isn't overpowering with cream cheese. It's great as an individual dessert or as a large cheesecake.
Using a food processor, blitz mint creme biscuits until they resemble a thick crumb. Stir through melted butter. Pack the biscuit and butter mix into a prepared cake tin. Refrigerate while you mix the filling.
Add cream cheese, caster sugar and cocoa powder into a large bowl and beat using an electric mixer and beat to combine.
Pour in the thickened cream and beat until you have a thick consistency.
Melt the chocolate in the microwave in short bursts. Mix into the cream cheese mixture until fully combined.
Spoon mixture over the biscuit base and smooth top. Chill in the fridge for 3 hours
Serve as is or decorate with berries and extra chocolate or my favorite - white chocolate ganache.
