For years (5 years actually) since moving to a gluten free diet I have tried sooo many cookie recipes and this has become my go to. It's easy, delicious and the texture has you reaching for more.
Ingredients
- 150g Soft Butter
- 1/2 Cup Brown Sugar
- 1/2 Cup Caster Sugar
- 1 Egg
- 1 TSP Vanilla Essence
- 1 3/4 Cups Gluten Free Plain Flour
- 1/2 Cup Milk Chocolate Chips
- 1/2 Cup White Chocolate Chips
Method
1. Preheat oven to 160C fan forced. Line 2 baking trays with baking paper.
2. Using an electric mixer beat sugars and butter until smooth and well combined. Beat in egg and vanilla until combined.
3. Stir in flour. Once combined stir in chocolate chips.
4. Roll heaped tablespoons of mixture into balls and place on trays spacing apart. Press down lightly to flatten slightly.
5. Bake for 15-18 minutes or until golden. Transfer to a wire rack and once cooled store in an airtight container.
