Delicious Walnut Brownies

Ah Brownies, my first love! Ha! But seriously, I love brownies! 
 
They should be chewy, fudge-like, and rich — and definitely not cakey. So how do you make the ideal brownie?
- Cooking temp is key. For the best results brownies should be cooked at 160C for a minimum of 30 minutes. If you cook them at a higher temp they will lose the fudge-like texture and end up more like cake.
- Let them cool in the pan. Brownies are very soft when hot and can break easily. You are going to need more will power than I possess to achieve this.
- Nuts, they are a personal preference and brownies are excellent without them however I personally think Walnuts take them to the next level. You can also mix it up with whatever nuts you have on hand.
- Use eggs at room temperature. Cold eggs can result in a denser texture than desired and they won't mix together as easily. 
- Baking time is key, just a minute or two of over cooking can be the difference between amazing brownies and "meh" brownies. There are so many variables between ovens so always check your brownies 5 minutes before they are meant to be done and always use a timer. 
- Use Baking Paper as it will stop the brownies from sticking to the pan and makes it easier to get them out of the pan.
 Ingredients
- 125g Unsalted butter, cubed
- 125g Dark Chocolate Chips
- 3 Eggs, lightly whisked
- 1 1/2 Cups of Caster Sugar
- 3/4 Cup Gluten Free Plain Flour
- 1/4 Cup Cocoa Powder
- 1 TSP Vanilla essence
- Pinch of Salt
- 100g of Walnuts 
Method
1. Preheat oven to 160C. Place baking paper in a brownie dish of choice. I like to use me heart shaped cake tin but you can use a normal cake tin or a 20cm x 20cm brownie tray).
2. Add butter and chocolate chips to a microwave safe bowl to melt. I turn it on in 30 second increments stirring between each one. You need to ensure you don't burn the chocolate.
3. Stir through eggs, flour, sugar, cocoa powder, salt and vanilla until just combined. Add walnut and mix to just combine. Be careful not to over mix the batter.
4. Pour into prepared dish and place in preheated oven for 30-40 minutes or until cooked. Every oven is different so check your brownies often after 30 minutes of cooking time.
5. Remove from oven and allow brownies to cool in the pan. They will be fragile when hot and will fall apart if you remove it from the baking dish too soon.
6. Once cool dust lightly with icing sugar and enjoy!!
